Are you looking for a summer salad that is quick and easy? Summertime meals that won’t break the bank and can be prepared in 20-minutes might just be what you’re looking for. This light and healthy orzo salad with goat cheese and pine nuts from The Social Chef makes a fantastic summer salad for lunch or a super appetizer.
There are varieties of orzo such as gluten free and whole wheat to name a couple, but for this summer salad I prefer a multi-color orzo just for the appearance. For diversity, you can add or exchange ingredients as well as for personal preference. Some additional ingredients that you may enjoy are artichoke hearts, hearts of palm, olives, asparagus or carrots. You may also prefer to use different types of pasta for a more hearty summer salad. Perhaps goat cheese isn’t your preferred choice. So be creative, take cooking into your own hands and personalize it. Use feta instead or whatever your heart desires. Cooking isn’t about following rules, so break the rules and create your own masterful summer salad for you and your entire family. Ready… set… grow!
Orzo salad with goat cheese and pine nuts
Red bell pepper
Crumbled goat cheese
Red wine vinegar
Extra-virgin olive oil
Salt and pepper
Cook pasta in salt water until al dente, drain and drizzle with a little olive oil so it won’t stick and allow to cool to room temperature. Add the amount of ingredients you desire to your taste. If serving bread, use a crusty type such as a Tuscan bread, with garlic infused olive oil warmed and then gently drizzled over the toasted bread. This even makes a great main course, and if you enjoy pasta like I do then this will be right up your alley.
